Ingredients:
  • 1/4 c butter
  • 1 c chopped onion
  • 1 garlic clove (or more!), crushed
  • 1 t curry powder
  • 1/2 t salt
  • 1/4 t crushed red pepper flakes
  • 3 c chicken broth
  • 1 3/4c canned pumpkin
  • 1 c cocoanut milk (or regular milk)

Directions:

  1. Sauté onions and garlic in butter until soft.
  2. Add spices and sauté for another minute.
  3. Add broth and simmer for 15 minutes.
  4. Blend in blender until creamy and garnish as desired. Enjoy!
