- 1/4 c butter
- 1 c chopped onion
- 1 garlic clove (or more!), crushed
- 1 t curry powder
- 1/2 t salt
- 1/4 t crushed red pepper flakes
- 3 c chicken broth
- 1 3/4c canned pumpkin
- 1 c cocoanut milk (or regular milk)
- Sauté onions and garlic in butter until soft.
- Add spices and sauté for another minute.
- Add broth and simmer for 15 minutes.
- Blend in blender until creamy and garnish as desired. Enjoy!
